Serves 4-6

Ingredients:

2 cups lentils, cooked, (according to package instructions) *

Sauce Ingredients:**

  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, finely minced
  • 1/2 medium onion, chopped (1 ¼ cups)
  • ¾-1 cup chopped carrots
  • 1 15 oz can fire roasted tomatoes
  • 1 15 oz. can crushed tomatoes
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup fresh basil leaves
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1 Bay Leaf
  • Pinch of Red Pepper Flakes
  • Nutritional Yeast (to sprinkle on top)
  • Salt & pepper to taste
  • ***Taste of Italy Young Living EO (optional)
  • 1 Spaghetti Squash****

Instructions:

  • Preheat oil in a large skillet over medium heat. Once the oil is warm, add garlic, then onions and carrots. Sauté for about 3-4 minutes, until softened.
  • Add fire roasted tomatoes, crushed tomatoes, parsley, basil, and spices. Raise heat so the sauce begins to boil, then reduce to a simmer. The sauce will begin to thicken slightly as it reduces down after about 10 minutes.
  • Add (cooked) lentils to the sauce and mix to combine. Taste the sauce and add salt and pepper to taste. Allow sauce to cook for another 10 minutes.
  • Remove Bay Leaf and discard.
  • Cut Spaghetti Squash length-wise, scoop out and discard seeds.
  • Place each half of the Spaghetti Squash cut side down in Pyrex with ¼” water, cover with plastic wrap. Microwave on High for 6 minutes or until the skin is fork tender. (It will be very hot so be careful handling) Let cool for 2-3 minutes.
  • Using a fork, scrape down the insides of the “spaghetti” squash in a serving bowl.
  • Top with lentil Bolognese and sprinkle with Nutritional Yeast.
  • Enjoy!

* Cook lentils according to package instructions, but do not salt water or use pre-packaged steamed lentils

**Instead of homemade sauce you can use low sugar, store-bought RAO’s sauce

*** Alternatively, spiralize zucchini into sauce or prepare chickpea or black bean pasta according to package instructions.
