Ingredients:

  • 1 cup quinoa
  • 1 cup mung beans
  • 3/4 cup onion, chopped
  • 2 cups spinach
  • 3/4 cup dried tart cherries
  • 1/2 cup pumpkin seeds
  • Himalayan sea salt and pepper to taste.

Directions:

Cook the quinoa and mung beans according to the package instructions.
Mix the quinoa, mung beans and onion in a large bowl.
Add in the spinach and mix gently.
Combine the tart cherries and pumpkin seeds.
Season with salt and pepper to taste.

This is a delicious main or side dish, served warm or room temperature. You can add feta cheese if you eat dairy.
