I love the fact that these can be made in batches and frozen for a quick and easy toaster breakfast or snack. Since they are not inherently sweet you can choose to make yours either sweet or savory according to the topping or filling you add to your batter. Be creative and share your creations. Waffle Ingredients:
- 1 scoop plant-based protein powder * (or 2 T collagen powder)
- ½ t baking powder
- 4 egg whites (or 6 oz. liquid egg whites)
- Pinch of sea salt
- 1 t coconut oil, softened or melted
- 1 T chia seeds
Optional fillings:
- 1 T dark chocolate chips
- blueberries
- everything but the bagel seeds
Directions:
- Whisk all the ingredients and pour into a waffle maker to cook. When ready use topping suggestions according to your mood.
Sweet Toppings:
- Fresh berries
- Sugar-free syrup alternative (I like Sukrin)
- Cinnamon
- Nut or seed butters
Savory Toppings:
- Mashed avocado
- Wild, smoked salmon
- Capers
- Dairy-free cream cheese
- Everything but the Bagel seeds
- Scrambled or poached eggs
*If your protein powder is unsweetened you may want to add 1-3 drops of liquid stevia and 1 t of vanilla to your batter.
