This is my high fiber version of the oatmeal and egg white crepe recipe that we have been making for years. Using the Fiber One buds makes it a little sweeter and thinner than the GG flakes but they are basically the same. If you prefer bananas and sliced strawberries, you can top with those too!

 

 

Ingredients:

  • ½ cup liquid Egg Whites (equivalent to the whites of approx. 4 large eggs)
  • ¼ cup pulverized Fiber One cereal or GG flakes (equivalent to 4 pulverized GG bran crackers)
  • 1 T Chia Seeds
  • 1 T Flax Meal
  • 1 packet Stevia
  • 1 t Vanilla (I prefer the powdered pure vanilla)
  • 1 t* Cinnamon (more for sprinkling on top)
  • ¼-1/2 cup fresh Berries
  • Maple Syrup ** optional for topping
  • 1 T Coconut Oil (or coconut oil spray) for pan

Directions:

Heat Coconut oil in an omelet pan.  Meanwhile, in a bowl combine all ingredients except the berries and syrup. Pour batter into hot pan and gently spread to cover the bottom of the pan. When the bottom is set, flip to cook the other side.  Warm the berries in the microwave and use like syrup on top of the pancake. Sprinkle extra cinnamon if desired.  Drizzle with syrup if you like.  Serve warm, and enjoy!
