Who knew that the “secret” to a delicious Greek Salad was in adding capers?! After our amazing vacation in the Greek Isles, we discovered that they added these little gems to their signature salad and it made a big difference (at least to me). I should note that in Greece they do not use lettuce but instead much more of the cucumber and tomatoes. I still like adding lettuce but you can decide for yourself.

Ingredients:

  • 2-3 heads Romaine Lettuce, roughly chopped
  • 1 small red Onion, sliced thinly
  • 1 pint of ripe Cherry Tomatoes, sliced lengthwise
  • 1 seedless Cucumber chopped (I cut in slices and then quarter those slices)
  • ½ jar Kalamata Olives, pitted, sliced
  • 2 T organic non-pareil Capers
  • 4 large Pepperoncini sliced into rings
  • Crumbled Feta
  • Primal Kitchen Greek Vinaigrette & Marinade Dressing (or homemade)
  • Protein of choice (optional if desired)

Directions:

  • Gently combine all salad ingredients in a large bowl.e to cool
  • Either add feta and protein to the salad or serve separately on the side.
  • If dressing the salad before serving it, use sparingly and provide on the side for anyone who would like more.
