Summertime is the best time for grilling delicious, fresh, organic veggies like yellow and green squash. They are easy to prepare and cook up quickly and are a win every time. I love to buy my fresh squash at the local farmer’s markets and pick the ones that look the best.

 

Ingredients:

  • Yellow and green squash
  • Olive oil
  • Sea salt
  • Freshly ground pepper
  • Herbes de Provence

Directions:

  • Heat grill on High and reduce heat to medium when you place the veggies on the grates.
  • Cut yellow and green squash lengthwise
  • Lightly brush (and season) both sides with a good quality olive oil
  • Sprinkle pink Himalayan sea salt and freshly ground pepper
  • Season with Herbes de Provence
  • Cook on hot grill coated with olive or coconut oil
  • Turn over when score lines are visible
  • Serve hot or at room temperature.
