Summertime is the best time for grilling delicious, fresh, organic veggies like yellow and green squash. They are easy to prepare and cook up quickly and are a win every time. I love to buy my fresh squash at the local farmer’s markets and pick the ones that look the best.
Ingredients:
- Yellow and green squash
- Olive oil
- Sea salt
- Freshly ground pepper
- Herbes de Provence
Directions:
- Heat grill on High and reduce heat to medium when you place the veggies on the grates.
- Cut yellow and green squash lengthwise
- Lightly brush (and season) both sides with a good quality olive oil
- Sprinkle pink Himalayan sea salt and freshly ground pepper
- Season with Herbes de Provence
- Cook on hot grill coated with olive or coconut oil
- Turn over when score lines are visible
- Serve hot or at room temperature.
