*adapted from Aunt Gert’s recipe
Ingredients:
- 3/4 cup Coconut Oil (melted)
- 1 ½ cup Coconut Palm Sugar or Monk fruit sweetener
- 4 eggs, beaten
- 2 cups Gluten-free 1:1 baking flour
- 1 heaping teaspoon baking powder
- 1 t vanilla
- 1 cup chocolate chips (dark bittersweet, or semisweet)**
- pinch of kosher salt
Directions:
Combine all ingredients.
Divide in ½, mold each half into a loaf on a parchment lined baking sheet
Bake 30 min, rotating racks halfway.
Cut across loaf into slices, then sprinkle cinnamon and cardamom on top.
Return to oven for 5-7 minutes.
Let cool on rack.
**You may include walnuts (half chocolate chips, half walnuts)
***May be stored in a sealed container or frozen.
