Breakfast is my favorite meals of the day. It usually sets the pace for the entire day. A healthy balanced breakfast ensures a high-energy, productive day ahead, free from blood sugar ups and downs and those annoying mid-day slumps.
The most important part of breakfast is to make sure you’re not secretly just loading up on sugar. People eat a bagel and a glass of OJ and think that’s healthy, but that much sugar is a disaster in the making.
A truly healthy breakfast is full of healthy fats and protein as well as plenty of nutrient-dense vegetables. Eggs are a great breakfast food because they’re full of healthy fats as well as protein. Pair a couple scrambled eggs with some pesto and avocado and you’ve got yourself a delicious and nutritious meal to start the day with.
Here’s my favorite egg recipe ever, it’s quick, easy, and oh so good as a lunch too!
Pesto Scrambled Eggs with Avocado
Serves 1
Ingredients:
2 eggs
1 tablespoon coconut oil
Handful of organic baby spinach
1 T diced shallot
1 cup fresh wild mushrooms (your choice)
1 small tomato, sliced
½ avocado, sliced
1-2 T vegan Pesto*
sea salt and black pepper to taste
*I love Le Grand brand Vegan Garden Pesto but you can make your own if you prefer
Directions:
- Crack the eggs into a small bowl.
- Using a fork or whisk, beat the eggs until the yolks and egg whites are uniform.
- Add pesto and set the eggs to the side.
- Place a pan over medium heat and add coconut oil.
- When the coconut oil is melted, add the shallots and when they appear opaque add mushrooms and sauté.
- Add spinach and then pour in eggs.
- Use a rubber spatula to fold the eggs towards the center until you no longer see any liquid (about 3 minutes).
- Season with salt and pepper as you fold.
- When the eggs are done, serve on a plate with sliced tomato and avocado.
