This was the first recipe I tried in my brand new Vitamix 3500. One of the best features besides the smoothie setting is the setting for hot soup. This blender literally cooked my soup for me!! It was a perfectly, thick, creamy consistency and didn’t have an ounce of cream in it!

Ingredients:

  • Head of organic broccoli, cut into pieces of mostly florets (with some stems attached)
  • 2-3 leeks, chopped mostly the white and light parts
  • 3-4 garlic cloves, finely minced
  • 4 cups of vegetable stock
  • 2 cups water
  • Red pepper flakes
  • Olive oil or spray
  • Sea salt
  • Freshly ground pepper
  • Herbamare*
  • Nutritional yeast

Directions:

  • Steam broccoli until just tender and set aside to cool
  • In a sauté pan, heat the red pepper flakes in the olive oil (or spray) and add the garlic to sauté until golden and fragrant
  • Add the chopped leeks to the sauté and cook until they are translucent
  • Put the leek/garlic mixture in the blender** with a little of the stock, and puree
  • Add the broccoli to the blender, add the rest of the liquid and blend on hot soup setting-approx 6 minutes
  • Season with salt, pepper, herbamare (if desired) and Nutritional Yeast for a little more flavor and some protein.
  • Blend on the soup setting again (only for 2-3 minutes)
  • Serve and Enjoy!

Notes:

*Herbamare is not necessary but a seasoning from sea vegetables that works very well with vegetables

**This recipe was made in my Vitamix. You can also puree in a different but good quality blender, adding the broccoli and then put it all in a large pot and using an immersion blender to create a similar dish.
