*Please note that these protein balls need to be made with gentleness as they do not have a binder. Freezing or putting in the refrigerator for up to 1 hour will help them firm up.  

 

 

Yields 10 -12 Balls

Ingredients:

  • ¼ cup raw cacao powder
  • 1 cup Medjool dates, soaked
  • ½ cup shredded, unsweetened coconut (plus extra for coating the truffles)
  • 1/2 cup raw pumpkin seeds
  • ¼ cup hemp seeds
  • ¼ cup chia seeds
  • 1 teaspoon vanilla extract
  • ¼ teaspoon cinnamon powder
  • 1/8 cup water
  • Pinch sea salt

Directions:

COMBINE ALL INGREDIENTS IN A HIGH-SPEED BLENDER. Form the ingredients into little balls in the palm of your hand (wearing latex gloves makes this easier).

Spread shredded coconut on the parchment and roll the “truffles’ in the coconut.

Line the balls on the parchment and place the pan into the freezer for 30 minutes to set. Enjoy or store in the refrigerator for up to 1 week.

*Be careful not to overmix
