Cauliflower rice is a healthy, delicious side dish and can be made with a variety of vegetables. Additionally, to save time and work, you can also purchase pre-packaged, fresh or frozen shredded cauliflower

 

 

Serves 4

Ingredients:

  • Grated fresh Cauliflower (either following directions below or use packaged cauliflower rice)
  • 1 small Onion, chopped
  • Multi-colored fresh Peppers, chopped
  • Green Beans, chopped*
  • 2 T Olive Oil
  • Herbamare seasoning
  • Nutritional Yeast, to taste (optional)

Directions:
Saute onions in olive oil until golden.
Add peppers and green beans and continue
to saute
Add cauliflower rice and continue to saute until well combined and tender
Sprinkle Herbamare and mix to season
Add a dash of Nutritional Yeast if desired
Serve warm or room temperature**

* other vegetables may be added included, frozen mixed vegetables or fresh mushrooms
** May be reheated
* Cauliflower Rice- remove leaves and stem and cut up into small florets. Add the florets to the food processor and pulse until the whole head is shredded in the consistency of rice.
