These delicious pancakes are gluten and dairy free and full of protein too!! Can you say What???

 

 

 

Ingredients:

  • 4 bananas, preferable brown and soft (defrosted frozen bananas works also)
  • 4 eggs
  • ½ cup gluten free organic oats
  • 1 cup fresh (or frozen) blueberries
  • 1 t vanilla
  • 1 t cinnamon (plus more to sprinkle on top if desired)
  • 1 T hemp seeds
  • 1 T chia seeds
  • 1 T coconut oil (you may need a little more for each batch)

Directions:

Heat coconut oil in a pan.  Mash the bananas and combine with the eggs and oats to make the batter.
Add in vanilla, cinnamon, hemp and chia seeds and whisk together.  Ladle the batter in pan to make desired size pancakes (I usually get about 3 per pan)  Add blueberries to the top and cook watching for bubbling around the edges and browning on the underside.  Gently flip pancakes and brown other side.  Serve with sliced bananas and cinnamon on top!
