This compote-like dish is a delicious sweet treat to enjoy as a dessert or snack. I also love to warm it and add to my quinoa as a high-protein breakfast (instead of oatmeal). My husband couldn’t believe I hadn’t added any sweetener-high praise.
Ingredients:
- 1 cup organic Berries – I prefer blueberries, raspberries or blackberries as they get mushy (remove leaves and slice in half if using strawberries)
- 2 organic Apples, cored and chopped
- 1 or 2 organic Pears, cored and chopped
- 3-4 T Raisins (choose a golden variety for a twist)
- 2 T dried Cranberries, Cherries or Blueberries
- 1 T Gogi Berries
- 1-2 t Cinnamon (or more to taste)
- 1/2 t Nutmeg, (freshly grated is my favorite)
- Coconut Oil to coat Pyrex
Directions:
Preheat oven to 375. Lightly coat a Pyrex baking pan with Coconut Oil. Add chopped apples and pears to Pyrex and then add berries and combine. Add dried fruit to Pyrex and gently combine all together. Generously sprinkle cinnamon on top, then grate nutmeg. Bake for 45 minutes or until apples are soft.
Delicious served warm or cold.
